| Recipe One-Bowl St. Nicholas Day Cake
Bring all ingredients to room temperature before
blending. Preheat oven to 375*. Grease and
flour one standard bundt cake pan.
1 c. sugar
1/2 c. butter or margarine
2 eggs
1/2 tsp. vanilla extract
1/2 tsp. almond extract
1 1/2 c. sifted flour
1/2 tsp. salt
2 1/2 tsp. baking powder
1/2 c. milk or water
In one large mixing bowl, cream the sugar and butter
until light and fluffy. Add the eggs, one at a
time, beating well after each one. Add vanilla and
almond extracts and beat again. Sift flour, salt
and baking powder and add to butter mix, alternating with
the milk. Mix only until blended. Pour into
prepared pans and bake for 30 - 35 min at 350*.
Cool on a wire rack and remove from pan. Dust with
a thick layer of powdered sugar and serve with ice cream.
